Scallion Pancakes

250 g + 2 T    APF
170 g        Boiling Water
½ t        Salt
¼ c        Untoasted Sesame Oil
1 bu        Scallions, Greens Sliced, Whites Reserved

STEP 1 Mix 250 g flour and salt. STEP 2 Stir in boiling water using chopsticks to form a dough. Knead just until ball forms. Rest covered 10 min. STEP 3 Knead 5-10 min until smooth, not sticky. Cut into 4 pieces, form small balls and rest 10 min. STEP 4 Fry scallion bottoms in sesame oil until oil is fragrant, remove scallions, mix hot oil with 2 T flour. STEP 5 Roll out ball of dough into square as thin as possible. Brush with scallion oil/flour mix. Sprinkle with salt, sprinkle with scallion greens. Roll dough up towards you into a snake. Then coil snake into a circle, tuck end underneath. STEP 6 Repeat with all balls. Let coils rest 20 min. STEP 7 Roll out pancakes 1 at a time to about ¼ in thickness. STEP 8 Heat pan over medium low, add oil to coat bottom. Fry pancakes flipping every couple of minutes, adding oil as needed to achieve even golden coloring. STEP 9 Enjoy
